Smoke Mackerel with Sriracha Jackets
OK so no this is not potato entirely. And sure you can just have some Sriracha Hot Chili Sauce mashed into a jacket it tastes nice and spicy!
However, Mackerel is very good for you and is rich in omega 3. This whole pack of small fillets is approx 600 Calories. Now if like me you may have some Breakfast then this then maybe an orange in the evening in theory you could eat the whole packet and still be within a 1500 calories. But I am going to only use 2 smallest then another day have the same and the larger one alone a third day.
So this is 200 Calories for the Fish and the rest is Potato diet fayre.
Ingredients
1 Pack of Smoked Mackerel Fillets
Jacket Potatoes
Sriracha Hot Chili Sauce
Salt
Method
Microwave a few large jackets
Turn after 15 minutes and cook for a further 15 minutes (800w Microwave).
Allow to cool slightly as they will be steaming hot!
Cut mash interior with salt and Sriracha (go easy as its spicy buy the best type!).
Then taste. Add more as an if required.
Microwave the fish for only a short time maybe 1 minute.
Divide the fish buy the number of Jackets you plan to eat. Mash the fish into the Jackets.
Serve.
Serving suggestion
You Can of course have the fish beside the Jacket on a plate. But it just cheers up the Jacket to have the fish mashed into it.
Very filling, rich tasting and a nice break from plain old spuds for what are very few calories extra.
